When I press the upgrade button, the software updater window simply disappears.
Also, I've also tried
sudo do-release-upgrade
However, I get the following message:
Checking for a new Ubuntu release
Please install all available updates for your release before upgrading.
This, despite having already run
sudo apt update
sudo apt upgrade
When doing the upgrade, I get:
Reading package lists... Done
Building dependency tree... Done
Reading state information... Done
Calculating upgrade... Done

Let's look at this part of your output:
In this case, "kept back" means Phased Updates.
You have two options:
Wait. When phasing is complete, your system will be able to release upgrade normally. Phasing usually lasts less than a week, occasionally longer if problems are found. (Preventing that problem from reaching you is the whole point of phasing).
Override phasing and install now. This is not recommended, but it's your system and it's your tolerance for risk.
