If you are installing on win2k8, you may want to do some checking about possible issues and workarounds. There are some questions on SF that deal with that.
You should be able to set up a single node cluster as long as you've got storage that can be shared. Note, when adding a node to a windows 2008 fail over cluster it will take the clustered resources down, resulting in an outage.
Just one note: if you are going to install it on a Windows Server 2008 R2 cluster, you have to slipstream Service Pack 1 into SQL Server 2008 before installing. If you are not familiar with slipstreaming, have a look at the following article:
