If i have vps on some remote provider, operator like amazon or aruba etc, and on ubuntu there, i have directory encrypted but mounted as decrypted, for example through encfs. (Boot, login to shell, mount with password, logoff and leave running). And this mounted folder,directory is shared to me through nginx or ftp server so i have access to it remotely without needing to decrypt. But since it is decrypted on this remote vps, and key is in vps machine memory, how can i protect it if vps company, aruba or amazon employee would like to sniff into it?

I have nextcloud, and there is connected remote storage, it is fuse folder of rclone mounted as local /drive.
On this /drive I have some big files.
when I start to download some big file I see it in bmon
that my vps is downloading it and serving to me.
But when I cancel it, it still is downloading until whole file is loaded somewhere into memory.
I have to do
service php7.0-fpm restart
to make it stop downloading.
I also tried
service nginx restart
but it does nothing.
Please help thanks.

I can only say the following things:
We use a Firebird DB with an application written by another company, Proxmox, for virtualization of Windows Server 2008 R2, SQL Server, cloud core Mikrotik router, and a few other Mikrotik devices.
I am not 100% sure, but is there some quick way to check if there are some backdoors left, without interrupting internal processes and reformatting everything?
This previous guy was really good, having written software in C++ and C#. I also know that he did some assembler and cracked a few programs in ollydbg.
